Check the server you're on has low latency and your tick health is high. Aside from that, make sure Direct Input is enabled.

Died a fair few times with this one. I have only used wines so far. I would suggest changing the bots behavior so that when the player has run out of wines/food, it uses the ladder to first disengage combat before returning down the ladder and going to buy more wine.

It already does this

Would you rather it tanks more hits whilst trying to leave the room??

the bot tries to leave the room and needs to open the curtain, this can result in taking multiple extra hits from the guard, in my case results in a death due to my low HP level (30).

At worst you would tank the same amount of damage using the ladder first, as you take hits while opening the curtain. At best you protect the player from taking additional hits by first disengaging the combat on the second level where the guard can't reach you.

The bot will try to blackjack a last time even when all wines are drank if the player is above the health threshold which then leads to death due to continued combat agro from the guard while trying to leave.
