hypothetically a series of critical exploits has been found and now Jagex is disabling the Java client for RS3, what would happen to the botting scene as a whole?

I know RuneMate would adapt to nxt but do you think gold prices would soar? while the competitors take months and possibly even years to get back into the scene.

I believe Jagex have already announced their intention to discontinue the Java client in the future.

I imagine most businesses that aren't capable of adding NXT support would bring in a contractor.

Yes they have, but from my perspective that isn't likely to happen very soon. There are still users having problems with the NXT client, and the Java client is a lot better for players with no dedicated graphics card like myself.
